A user interview is a UX research method.

UX researchers conduct “user interviews” to acquire qualitative data and insights into a user's perception of a system and their associated motivations, desires, and experiences.

Typically, these interviews involve one interviewer and one interviewee (an end-user or potential user), last between half an hour and an hour, and take place in person or remotely (e.g. via a video chat service).
